Vinification and Ageing: soft pressing of the dried grapes, insertion of the must flower in the "caratelli" together with the "mother" of the previous years.  Slow fermentation. Permanence in the “caratelli” inside the vinsantaia room for at least 5/8 years.

Insights on the Production Process

"...Curato follows the canons of the most ancient Tuscan tradition. Its goodness is equal to the slowness of the production process that uses the mother yeasts handed down from generation to generation. In the pre-bottling blending phase, very small quantities of product with different sensory characteristics due to the quality of the caratello wood, the quality of the grapes and the fermentation process are skillfully mixed in order to obtain a well-balanced product with a powerful sensory identity at the same time..."

 

Pairings and Serving Notes

Curato 2015 is an excellent accompaniment to pastry preparations, especially to traditional Tuscan Cantucci. These dry cookies are prepared with whole almonds and are literally soaked in Vin Santo. The "Cantucci and Vin Santo" are a great way to end dinner or enjoy a moment of relaxation. It is also ideal with typical Tuscan desserts such as Ricciarelli di Siena, Buccellato (a cake with raisins and aniseed) or the traditional castagnaccio. Out of the box, Curato can also be an excellent aperitif or be paired with blue cheeses such as sweet gorgonzola. Finally, Curato is also excellent as a meditation wine giving moments of great pleasure.

Label

The light capsule and label background color highlight the beautiful Curato color visible on transparent glass.
The band placed horizontally as a connecting element between the capsule and the wine shows in the central part the number of the bottle and the date to which it is tied; on the left side appears the inscription "only one thousand numbered bottles" and on the right side "the first thousand days of Curato's life".
In the upper part of the label appears the hot gold symbol of the moon then re-proposed in its phases, to more careful observation, at the four corners of the label.
Immediately below the proper name of the wine with its geographical qualification, there is the box of symbols compressed and defined by a gold thread showing in the lower part, a reverse inscription in the style of Leonardo da Vinci. The colors of the symbols, unlike Arturo's label, have warm tones that retrace the chromatic complexity of the wine. At the base, in gold, the name of the winery.

"...couleur jaune doré intense avec des tons ambrés. Dans le verre, vous pouvez immédiatement percevoir la grande densité et la concentration. Le nez est un triomphe de sensations chaudes ; des notes de raisins secs, de figue sèche, de noix et de miel, suivies de parfums de datte, d'abricot sec, de fruits confits, d'écorce d'agrumes. En bouche, la correspondance avec les notes olfactives est exemplaire. La grande douceur est parfaitement équilibrée par le long séjour dans le bois. Le caractère oxydatif agit comme un lien pour son grand bagage aromatique..."

Vinification et vieillissement : pressage doux des raisins secs, insertion de la fleur de moût dans les caratelles avec la "mère" des années précédentes. Fermentation lente. Permanence dans les caratelli à l'intérieur de la salle de vinification pendant au moins 5/6 ans.

Aperçu du processus de production

"...Curato suit les canons de la plus ancienne tradition toscane. Sa bonté est égale à la lenteur du processus de production qui utilise les levures mères transmises de génération en génération. Dans la phase de mélange avant la mise en bouteille, de très petites quantités de produit aux caractéristiques sensorielles différentes dues à la qualité du bois de caratello, à la qualité des raisins et au processus de fermentation sont savamment mélangées afin d'obtenir un produit bien équilibré avec une identité sensorielle puissante en même temps..."

Couplages et notes de service

Curato 2013 est un excellent accompagnement pour les préparations de pâtisseries, en particulier pour les cantucci toscanes traditionnelles. Ces biscuits secs sont préparés avec des amandes entières et sont littéralement trempés dans du Vin Santo. Les "Cantucci et Vin Santo" sont un excellent moyen de terminer le dîner ou de profiter d'un moment de détente. Ils accompagnent également les desserts typiques de la Toscane tels que les Ricciarelli di Siena, le Buccellato (gâteau aux raisins secs et à l'anis) ou le traditionnel castagnaccio. Sorti de son emballage, le Curato peut également être un excellent apéritif ou être associé à des fromages bleus comme le gorgonzola doux. Enfin, le Curato est également excellent comme vin de méditation donnant des moments de grand plaisir.

Label

La couleur de fond de la capsule et de l'étiquette fait ressortir la belle couleur de Curato visible sur le verre transparent.
La bande placée horizontalement comme élément de liaison entre la capsule et le vin indique dans la partie centrale le numéro de la bouteille et la date à laquelle elle est attachée ; sur le côté gauche apparaît l'inscription "seulement mille bouteilles numérotées" et sur le côté droit "les mille premiers jours de la vie de Curato".
Dans la partie supérieure de l'étiquette apparaît le symbole de la lune en or chaud puis reproposé dans ses phases, pour une observation plus attentive, aux quatre coins de l'étiquette.
Immédiatement sous le nom propre du vin avec sa qualification géographique, se trouve la boîte de symboles comprimés et définis par un fil d'or montrant dans la partie inférieure, une inscription inversée dans le style de Léonard de Vinci. Les couleurs des symboles, à la différence de l'étiquette d'Arturo, ont des tons chauds qui retracent la complexité chromatique du vin. A la base, en or, le nom du domaine viticole.
